Ingredients

  • 2 ears of corn, husked
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, chopped
  • 1/4 red onion, finely diced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp balsamic vinegar
  • 1 tbsp olive oil (for salsa)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or preheat your air fryer to 375°F (190°C).
  2. Slice each corn cob into quarters lengthwise to create ‘ribs’.
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper.
  4. Brush the corn ribs with the seasoned oil mixture.
  5. Bake or air fry for 15–20 minutes until the corn ribs curl and start to brown.
  6. Meanwhile, prepare the salsa by combining chopped cherry tomatoes, red onion, parsley, balsamic vinegar, and olive oil in a bowl. Season with salt and pepper.
  7. Serve the hot corn ribs with the tomato salsa on the side or spooned on top.
