Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, 1/2 cup sugar, and melted butter until combined.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake crust for 8–10 minutes, then remove and cool slightly.
  5. In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth.
  6. Add eggs one at a time, beating after each addition.
  7. Reserve 1 cup of the cream cheese mixture; set aside.
  8. To the remaining batter, add pumpkin puree, cinnamon, nutmeg, and cloves. Mix until blended.
  9. Pour pumpkin mixture over the crust.
  10. Drop spoonfuls of the reserved batter over the pumpkin layer and swirl gently with a knife.
  11. Bake 40–45 minutes or until center is set.
  12. Cool completely, then refrigerate at least 3 hours before slicing.
