Heat a large skillet over medium heat. Add ground pork and cook until browned.
Stir in garlic and ginger. Cook for 1 minute until fragrant.
Add the coleslaw mix and stir to combine.
Pour in soy sauce and sesame oil. Stir well and cook for 4-5 minutes until veggies soften.
Season with salt, pepper, and optional sriracha.
Garnish with sliced green onions and serve hot.
