In a large mixing bowl, combine warm water, yeast, and honey. Let sit for 5–10 minutes until foamy.
Add flour and salt. Mix until a sticky dough forms.
Add olive oil and knead the dough until smooth, about 5–7 minutes.
Cover and let rise in a warm place until doubled, about 1 hour.
Grease a 9x13 inch baking pan with olive oil. Transfer the dough into the pan and stretch it out evenly.
Cover and let rise again for 30 minutes.
Preheat oven to 425°F (220°C).
Dimple the dough with your fingers, drizzle with more olive oil, sprinkle flaky salt, and herbs if using.
Bake for 20–25 minutes until golden brown.
Let cool slightly before slicing and serving.
