Place one chicken breast in the center of each foil sheet.
Top each chicken breast evenly with black beans, corn, and red bell pepper.
Sprinkle with taco seasoning and spoon salsa over the top.
Fold foil over the chicken and seal the edges to form packets.
Bake for 30-35 minutes or grill for 20-25 minutes until chicken is cooked through.
Open packets carefully, sprinkle with cheese, and let melt before serving.
