Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked white rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • Tzatziki sauce, for drizzling

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken and marinate for at least 30 minutes, preferably longer.
  3. Grill or pan-sear chicken over medium heat until cooked through, about 6-7 minutes per side.
  4. Let chicken rest, then slice into strips.
  5. Divide cooked rice or quinoa into bowls.
  6. Top with chicken, tomatoes, cucumber, onion, olives, feta, and parsley.
  7. Drizzle with tzatziki sauce and serve immediately or store for meal prep.
