Ingredients

  • 6 cups spring mix or greens of choice
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup halved grape tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted nuts (almonds, walnuts, or pecans)
  • 1/2 avocado, sliced (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. In a large salad bowl, combine the greens, cucumber, tomatoes, red onion, feta, and toasted nuts.
  2. Add sliced avocado if using.
  3. In a small bowl or jar, whisk together the olive oil, vinegar, mustard, garlic, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
