Easy Grilled Halloumi Watermelon Salad

Ingredients

  • 8 ounces halloumi cheese, sliced
  • 2 tablespoons olive oil, divided
  • 4 cups watermelon, cubed
  • 1/4 cup fresh mint leaves
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons chopped pistachios
  • 1 tablespoon honey
  • 1 teaspoon hot sauce (or more to taste)
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium heat. Brush halloumi slices with 1 tablespoon olive oil.
  2. Grill halloumi for 2-3 minutes on each side until golden brown grill marks appear. Set aside.
  3. In a small bowl, whisk together honey, hot sauce, red pepper flakes, lime juice, and remaining olive oil. Season with salt and pepper.
  4. In a large bowl, combine watermelon, mint, red onion, and pistachios. Gently toss.
  5. Top with grilled halloumi and drizzle with the spicy honey-lime dressing just before serving.
