Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 8 flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup chopped onion (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess fat.
  3. Add taco seasoning and water, stir well, and simmer for 3-4 minutes.
  4. Spread a spoonful of enchilada sauce over the bottom of a 9x13 inch baking dish.
  5. Divide the beef mixture evenly among tortillas. Sprinkle with cheese, roll up, and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the enchiladas and top with remaining cheese.
  7. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
  8. Garnish with chopped onion and cilantro before serving if desired.
