Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons golden syrup or honey
  • 1 1/4 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Stir in the golden syrup or honey.
  4. Add the oats, flour, baking soda, and salt. Mix until well combined.
  5. Scoop tablespoon-sized amounts of dough and roll into balls. Flatten slightly and place on the baking sheet.
  6. Bake for 10-12 minutes or until golden brown. Allow to cool completely on a wire rack.
  7. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between.
  8. Dip each cooled cookie halfway into the melted chocolate and place back on parchment paper to set.
