Ingredients

For the Salmon

  • 2 salmon fillets
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 tsp dried oregano

For the Orzo

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tbsp butter
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

For the Salmon

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon with salt, pepper, and oregano.
  3. Sear the salmon fillets for 3-4 minutes per side until golden brown.
  4. Add garlic and lemon juice to the pan, basting the salmon for extra flavor.
  5. Remove from heat and let rest.

For the Orzo

  1. Cook orzo in chicken broth according to package instructions.
  2. Drain excess liquid and stir in butter, Parmesan, and parsley.
  3. Season with salt and pepper to taste.
  4. Serve with the seared salmon.
