Line a baking sheet with parchment paper.
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
Stir in mint extract and a few drops of green food coloring, if using.
Fold in most of the chopped Mint Oreos, reserving a handful for topping.
Pour the mixture onto the prepared baking sheet and spread evenly.
Sprinkle remaining Oreo pieces and sprinkles on top.
Chill in the refrigerator for about 30 minutes or until firm.
Break into pieces and serve.
