Ingredients

  • 1 tablespoon olive oil
  • 500g chicken breast, thinly sliced
  • 2 garlic cloves, minced
  • 1 small zucchini, grated
  • 400g can diced tomatoes
  • 2 cups low-sodium chicken broth
  • 250g penne pasta
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, to serve
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned.
  3. Stir in the garlic and cook until fragrant.
  4. Add zucchini, diced tomatoes, chicken broth, and pasta.
  5. Bring to a boil, then reduce heat to low and simmer until pasta is tender.
  6. Stir in Parmesan cheese and season with salt and pepper.
  7. Garnish with fresh basil leaves before serving.
