In a shallow bowl, mix flour, Parmesan cheese, Italian seasoning, garlic powder, paprika, salt, and pepper.
Dredge each chicken slice in the mixture until fully coated.
Heat olive oil in a large skillet over medium heat. Cook chicken in batches for about 4-5 minutes on each side until golden brown and cooked through. Set aside.
In the same skillet, melt butter and add minced garlic. Sauté for 30 seconds.
Add zucchini slices and cook for 3–4 minutes until just tender.
Return the chicken to the skillet to warm through.
Garnish with fresh parsley if desired and serve immediately.
