Ingredients

  • 12 ounces pasta (rotini or fusilli work well)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing (or more to taste)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, olives, red onion, feta cheese, and parsley.
  3. Pour in the Italian dressing and toss until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
