Add buttermilk, eggs, and oil to the dry ingredients. Stir until just combined.
Fold in the pimentos and shredded cheese until evenly distributed.
Pour the batter into the prepared baking dish and smooth the top.
Bake for 30 to 35 minutes or until golden brown and a toothpick inserted comes out clean.
Allow to cool slightly before slicing and serving.
