Ingredients

  • 1 cup self-rising cornmeal mix
  • 1 cup self-rising flour
  • 1/4 cup sugar
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 (4 oz) jar diced pimentos, drained
  • 1 1/2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 350°F. Grease a 9x9-inch baking dish or line with parchment paper.
  2. In a large mixing bowl, whisk together the cornmeal mix, flour, and sugar.
  3. Add buttermilk, eggs, and oil to the dry ingredients. Stir until just combined.
  4. Fold in the pimentos and shredded cheese until evenly distributed.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 30 to 35 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool slightly before slicing and serving.
