In a large mixing bowl, stir together warm water, yeast, and sugar. Let it sit for 5–10 minutes until foamy.
Add 2 ½ cups of flour, salt, and olive oil. Mix until a shaggy dough forms.
Knead the dough on a floured surface for about 8 minutes, adding more flour if needed until smooth.
Place the dough in a greased bowl, cover, and let rise for 1–1.5 hours or until doubled in size.
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into ¼-inch thick circles.
Preheat a skillet over medium-high heat. Cook each pita for 1–2 minutes per side until puffed and golden.
Wrap warm pitas in a clean towel to keep soft. Serve fresh or store for later use.
