Ingredients

  • 1 cup warm water (110°F)
  • 2 teaspoons active dry yeast
  • 2 ½–3 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl, stir together warm water, yeast, and sugar. Let it sit for 5–10 minutes until foamy.
  2. Add 2 ½ cups of flour, salt, and olive oil. Mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 8 minutes, adding more flour if needed until smooth.
  4. Place the dough in a greased bowl, cover, and let rise for 1–1.5 hours or until doubled in size.
  5. Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into ¼-inch thick circles.
  6. Preheat a skillet over medium-high heat. Cook each pita for 1–2 minutes per side until puffed and golden.
  7. Wrap warm pitas in a clean towel to keep soft. Serve fresh or store for later use.
