Preheat oven to 375°F (190°C) and grease a baking dish.
In a saucepan, melt butter over medium heat. Add garlic and onion, sauté until softened.
Stir in flour, then gradually whisk in milk and heavy cream. Cook until slightly thickened.
Add salt, pepper, paprika, and thyme. Remove from heat and stir in half of the cheese.
Layer half of the sliced potatoes in the prepared baking dish, pour half of the sauce over them.
Repeat with remaining potatoes and sauce, then sprinkle with remaining cheese.
Season pork chops with salt and pepper, then place on top of the potatoes.
Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes until golden brown.
Let it rest for 5 minutes before serving.
