Ingredients

  • 2 cups cooked quinoa
  • 1/2 cup pizza sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup mini pepperoni slices (or chopped pepperoni)
  • 1/4 cup sliced black olives
  • 1/4 cup diced bell peppers
  • 1/4 tsp Italian seasoning
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Divide cooked quinoa evenly between oven-safe bowls or ramekins.
  3. Top with pizza sauce, mozzarella cheese, pepperoni, olives, and bell peppers.
  4. Sprinkle with Italian seasoning.
  5. Bake for 10-12 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh basil if desired. Serve warm.
