Ingredients

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 tablespoons apple cider (for glaze)
  • 1/2 cup confectioners’ sugar (for glaze)

Instructions

  1. Preheat oven to 350°F and grease a 9x5-inch loaf pan.
  2. In a small saucepan, simmer 1 cup apple cider until reduced to 1/4 cup. Let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  5. Mix in the reduced cider and sour cream. Gradually add dry ingredients and mix until just combined.
  6. Pour batter into the prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  7. Cool for 10 minutes in the pan, then transfer to a wire rack.
  8. Whisk glaze ingredients and drizzle over cooled cake.
