Ingredients

  • 2 Persian cucumbers, thinly sliced
  • 1/4 tsp salt
  • 2 cloves garlic, minced
  • 1 1/2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1/2 tsp red chili flakes (adjust to taste)
  • 1 tsp toasted sesame seeds
  • 1 stalk green onion, chopped

Instructions

  1. In a bowl, toss the sliced cucumbers with salt and let sit for 10 minutes to draw out excess water.
  2. Drain the liquid and gently squeeze the cucumbers to remove remaining moisture.
  3. In a separate bowl, combine garlic, rice vinegar, soy sauce, sugar, sesame oil, and chili flakes.
  4. Add the cucumbers to the dressing and mix well.
  5. Sprinkle with toasted sesame seeds and chopped green onion before serving.
