Ingredients

  • 2 ripe bananas
  • 1/4 cup natural peanut butter (or any nut/seed butter)
  • 1/4 cup dark chocolate chips (dairy-free if needed)
  • 1 tsp coconut oil (optional, for melting chocolate)

Instructions

  1. Slice bananas into 1/4-inch rounds and place half of them on a baking sheet lined with parchment paper.
  2. Spread a small amount of peanut butter onto each banana slice.
  3. Top with the remaining banana slices to form mini sandwiches.
  4. Freeze for 1 hour or until firm.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring between each until smooth.
  6. Dip half of each banana sandwich into the melted chocolate and return to the parchment paper.
  7. Freeze again for 15-30 minutes until chocolate is set. Enjoy!
