Ingredients

  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, corn, diced bell pepper, chopped onion, and cilantro.
  2. Drizzle olive oil and lime juice over the top. Season with salt and pepper.
  3. Gently toss to combine all ingredients.
  4. Add diced avocado just before serving and lightly toss again.
  5. Serve chilled or at room temperature.
