Ingredients

  • 1 pint cherry tomatoes
  • 3 tbsp olive oil, divided
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs
  • 1 baguette, sliced
  • 2 garlic cloves, peeled
  • 8 oz fresh burrata cheese
  • Fresh basil leaves for garnish
  • Balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with 1 tbsp olive oil, salt, pepper, and Italian herbs. Roast on a baking sheet for 20 minutes.
  3. Brush baguette slices with 2 tbsp olive oil and toast in the oven for 8–10 minutes or until golden.
  4. Rub each toasted slice with a garlic clove while still warm.
  5. Top each slice with roasted tomatoes and a generous portion of burrata.
  6. Garnish with fresh basil and a drizzle of balsamic glaze. Serve immediately.
