Preheat oven to 375°F (190°C).
In a large bowl, combine all ingredients except ½ cup of cheddar cheese reserved for topping.
Mix thoroughly until well combined.
Transfer the mixture to a greased 9-inch baking dish or cast iron skillet.
Top with remaining cheddar cheese.
Bake for 25–30 minutes or until hot and bubbly.
Garnish with chopped cilantro if desired and serve warm with tortilla chips or crusty bread.
