Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
Lay the pounded chicken breasts flat and season with salt, pepper, garlic powder, and Italian seasoning.
Sprinkle mozzarella and Parmesan cheese evenly over each piece of chicken.
Roll up each chicken breast tightly and place seam side down in the prepared baking dish.
Pour marinara sauce over the top of the rolls and cover with foil.
Bake for 25-30 minutes, then uncover and bake for another 5-10 minutes until golden and bubbly.
Garnish with fresh herbs if desired and serve hot.
