Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 teaspoons fajita seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup corn kernels
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 avocado, sliced
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken slices and cook until browned, about 5-6 minutes.
  3. Add the bell peppers, onion, fajita seasoning, paprika, salt, and pepper. Stir and cook for another 5-6 minutes until veggies are tender.
  4. Assemble the burrito bowls by dividing the rice into bowls.
  5. Top with corn, black beans, chicken and veggies, shredded cheese, salsa, sour cream, and avocado.
  6. Garnish with chopped cilantro if desired. Serve immediately.
