Heat olive oil in a large skillet over medium-high heat.
Add the chicken slices and cook until browned, about 5-6 minutes.
Add the bell peppers, onion, fajita seasoning, paprika, salt, and pepper. Stir and cook for another 5-6 minutes until veggies are tender.
Assemble the burrito bowls by dividing the rice into bowls.
Top with corn, black beans, chicken and veggies, shredded cheese, salsa, sour cream, and avocado.
Garnish with chopped cilantro if desired. Serve immediately.
