Ingredients

  • 1 lb salmon fillet, skin removed and cut into cubes
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Wooden skewers, soaked in water for 30 minutes
  • 1 cup fresh parsley, chopped
  • 4 garlic cloves, minced
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 cup olive oil

Instructions

  1. In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Toss the salmon cubes until well coated.
  2. Thread salmon onto skewers and set aside.
  3. To make chimichurri, combine parsley, garlic, chili flakes, red wine vinegar, salt, and olive oil in a bowl. Mix well and set aside.
  4. Heat a grill or grill pan over medium-high heat. Lightly oil the grates.
  5. Grill salmon skewers for 2-3 minutes on each side until cooked through and lightly charred.
  6. Serve hot with chimichurri sauce drizzled on top or on the side.
