Ingredients

  • 1 cup (240ml) water
  • 1/2 cup (113g) unsalted butter, cut into cubes
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon ground cinnamon
  • 6 oz (170g) semisweet chocolate, finely chopped
  • 1/4 cup (60ml) heavy cream

Instructions

  1. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and add the flour. Stir continuously until the mixture forms a ball and pulls away from the sides.
  3. Transfer dough to a bowl and let cool slightly. Beat in eggs one at a time, then mix in vanilla.
  4. Spoon dough into a piping bag fitted with a large star tip.
  5. Pipe donut rings onto parchment paper squares.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry donuts until golden brown, flipping once.
  7. Combine sugar and cinnamon in a shallow bowl and toss warm donuts in the mixture.
  8. For the filling, heat cream and pour over chopped chocolate. Let sit 2 minutes, then stir until smooth.
  9. Pipe chocolate ganache into the center of each donut using a piping bag fitted with a small tip.
  10. Serve warm and enjoy!
