Ingredients

  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups cooked chicken, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoons butter

Instructions

  1. In a bowl, toss diced chicken with lime juice, garlic powder, onion powder, cumin, and salt.
  2. Lay out the tortillas and sprinkle half of the cheese evenly on one side of each.
  3. Top with the seasoned chicken and fresh cilantro.
  4. Sprinkle the remaining cheese over the chicken, then fold the tortillas in half.
  5. Heat a large skillet over medium heat and melt butter.
  6. Cook each quesadilla until golden brown and cheese is melted, about 2-3 minutes per side.
  7. Remove, slice into wedges, and serve warm.
