Ingredients

  • 1 lb ground beef
  • 4 medium russet potatoes, diced
  • 2 cups baby carrots, sliced
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Aluminum foil

Instructions

  1. Preheat your oven to 400°F or heat your campfire coals.
  2. In a large bowl, combine potatoes, carrots, and onion. Drizzle with olive oil and season with salt, pepper, garlic powder, and onion powder. Toss to coat.
  3. Form four large rectangles of aluminum foil. Place equal portions of ground beef in the center of each foil sheet and flatten slightly.
  4. Top each portion with the seasoned veggie mix.
  5. Fold and seal each foil packet tightly.
  6. Place packets on a baking sheet and bake for 35–40 minutes, or cook directly in campfire coals for 30–35 minutes, until meat is fully cooked and vegetables are tender.
  7. Open packets carefully (they’ll be hot!) and serve right from the foil or plate up for a cozy dinner.
