Preheat your oven to 300°F and prepare a muffin tin or silicone egg bite mold by greasing it lightly.
In a blender, combine eggs, cottage cheese, and Monterey Jack cheese. Blend until smooth.
Pour the mixture evenly into the molds, filling them about 3/4 full.
Top each with a bit of crumbled bacon and diced red peppers.
Place the mold into a larger baking dish filled with hot water to create a water bath.
Bake for 30 minutes or until the egg bites are set.
Let them cool for a few minutes before removing and serving.
