Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled cooked bacon
  • 1/4 cup diced roasted red peppers
  • Salt and pepper, to taste
  • Butter or oil spray (for greasing the molds)

Instructions

  1. Preheat your oven to 300°F and prepare a muffin tin or silicone egg bite mold by greasing it lightly.
  2. In a blender, combine eggs, cottage cheese, and Monterey Jack cheese. Blend until smooth.
  3. Pour the mixture evenly into the molds, filling them about 3/4 full.
  4. Top each with a bit of crumbled bacon and diced red peppers.
  5. Place the mold into a larger baking dish filled with hot water to create a water bath.
  6. Bake for 30 minutes or until the egg bites are set.
  7. Let them cool for a few minutes before removing and serving.
