Slice baked potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/4-inch of potato in the skins.
Brush the inside and outside of each potato skin with olive oil, then sprinkle with garlic powder, salt, and pepper.
Place in the air fryer basket skin-side down. Air fry at 400°F for 5 minutes.
Turn them over and air fry for another 5 minutes until crisp.
Flip them back skin-side down, fill each with cheddar cheese and bacon, and air fry for an additional 2–3 minutes or until cheese is melted.
Top with sour cream and sliced green onions before serving.
