Ingredients

  • 2 cups cold mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 strips cooked bacon, crumbled
  • 2 green onions, finely sliced
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs (panko preferred)
  • Oil for frying

Instructions

  1. In a large bowl, mix mashed potatoes, cheddar, bacon, green onions, garlic powder, salt, and pepper until well combined.
  2. Scoop out small portions and roll into balls.
  3. Roll each ball in flour, dip in beaten eggs, then coat in breadcrumbs.
  4. Place on a tray and refrigerate for 30 minutes to firm up.
  5. Heat oil in a deep pot to 350°F (175°C).
  6. Fry the balls in batches until golden and crispy, about 3-4 minutes.
  7. Transfer to paper towels to drain excess oil. Serve hot with your favorite dip.
