Ingredients

  • 1 whole chicken (cut into 8 pieces)
  • 3 cups all-purpose flour
  • 2/3 tablespoon salt
  • 1/2 tablespoon thyme
  • 1/2 tablespoon basil
  • 1/3 tablespoon oregano
  • 1 tablespoon celery salt
  • 1 tablespoon black pepper
  • 1 tablespoon dried mustard
  • 4 tablespoons paprika
  • 2 tablespoons garlic salt
  • 1 tablespoon ground ginger
  • 3 tablespoons white pepper
  • 2 eggs
  • 2 cups buttermilk
  • Vegetable oil for frying

Instructions

  1. In a large bowl, whisk eggs with buttermilk. Soak chicken pieces in the mixture for at least 30 minutes.
  2. In another bowl, combine flour with all herbs and spices.
  3. Remove chicken from buttermilk and coat thoroughly in the flour mixture. Let rest for 15 minutes.
  4. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  5. Fry chicken in batches for 15-18 minutes or until golden brown and internal temperature reaches 165°F (74°C).
  6. Place fried chicken on a wire rack or paper towels to drain excess oil.
  7. Serve hot and enjoy the homemade KFC-style crunch!
