Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup breadcrumbs (plain or Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt & black pepper to taste
  • 1 large egg
  • 2 tbsp milk
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Lightly spray with olive oil.
  2. Slice chicken breasts in half horizontally to create thinner cutlets.
  3. In one bowl, whisk together the egg and milk. In another bowl, combine breadcrumbs, Parmesan, and seasonings.
  4. Dip each chicken cutlet into the egg mixture, then coat in the breadcrumb mixture. Press lightly to ensure coating sticks.
  5. Place coated cutlets on the prepared baking sheet. Spray tops lightly with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F.
