Ingredients

  • 1 cucumber, peeled and chopped
  • 1 ripe banana
  • 1 cup fresh or frozen pineapple chunks
  • 1 cup coconut milk (unsweetened)
  • 1/2 lemon, juiced
  • 1/2 cup water
  • 1/2 cup ice cubes (optional)

Instructions

  1. Add the cucumber, banana, pineapple chunks, coconut milk, and lemon juice to a blender.
  2. Pour in the water and add ice cubes if using.
  3. Blend until smooth and creamy.
  4. Taste and adjust sweetness or lemon to preference.
  5. Pour into a glass and enjoy immediately!
