Ingredients

  • 1 lb dry red kidney beans
  • 2 cinnamon sticks
  • 4 cups water
  • 1 can (13.5 oz) coconut milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup sugar (adjust to taste)
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup cooked sweet potato, mashed
  • 1/2 cup raisins
  • 4-6 pieces milk cookies (or Maria cookies), crushed

Instructions

  1. Soak beans overnight in water. Drain and rinse.
  2. In a large pot, boil beans with 4 cups of water and cinnamon sticks until soft, about 1 hour.
  3. Remove cinnamon sticks. Blend beans with cooking liquid until smooth.
  4. Return blended beans to the pot. Stir in coconut milk, evaporated milk, and condensed milk.
  5. Add mashed sweet potato, salt, spices, and sugar. Simmer over low heat for 15–20 minutes, stirring frequently.
  6. Stir in raisins and crushed cookies. Cook for another 5 minutes.
  7. Serve warm or chilled. Garnish with additional crushed cookies if desired.
