Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Separate the egg whites from the yolks. Place whites in a clean mixing bowl.
Whip the egg whites with baking powder and salt until stiff peaks form.
In a separate bowl, blend cottage cheese with egg yolks until smooth.
Gently fold the yolk mixture into the whipped egg whites using a spatula. Do not overmix.
Scoop the batter into 6 equal portions onto the prepared baking sheet.
Bake for 20-25 minutes, or until golden brown and set.
Let cool for 5-10 minutes before serving.
