Ingredients

  • 3 large eggs
  • 1/2 cup cottage cheese (full-fat or low-fat)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • Butter or avocado oil spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks. Place whites in a clean mixing bowl.
  3. Whip the egg whites with baking powder and salt until stiff peaks form.
  4. In a separate bowl, blend cottage cheese with egg yolks until smooth.
  5. Gently fold the yolk mixture into the whipped egg whites using a spatula. Do not overmix.
  6. Scoop the batter into 6 equal portions onto the prepared baking sheet.
  7. Bake for 20-25 minutes, or until golden brown and set.
  8. Let cool for 5-10 minutes before serving.
