Ingredients

  • 2 cups cooked corn (fresh, canned, or frozen and thawed)
  • 1½ cups cherry tomatoes, halved
  • 1½ cups cucumber, sliced and halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup chopped fresh basil
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine corn, tomatoes, cucumber, red onion, and basil.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill for at least 30 minutes before serving for best flavor.
