Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup granulated sweetener of choice
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup neutral oil (like sunflower or canola)
  • 1 tbsp vanilla extract
  • 3 tbsp rainbow sprinkles (allergy-friendly)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease or line an 8x8-inch baking dish.
  2. In a large mixing bowl, whisk together the flour, sweetener, baking powder, baking soda, and salt.
  3. Add in the applesauce, oil, and vanilla extract. Stir until a thick batter forms.
  4. Fold in the rainbow sprinkles gently, reserving a few for topping.
  5. Spread the batter evenly in the prepared baking dish and sprinkle remaining sprinkles on top.
  6. Bake for 22–25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the blondies cool completely in the pan before slicing and serving.
