Ingredients

  • 1 1/2 cups warm water (110° F)
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 2/3 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse salt, for topping

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Add salt and flour gradually, mixing until dough forms.
  3. Knead dough on a floured surface for about 5 minutes, until smooth.
  4. Place dough in an oiled bowl, cover, and let rise for 1 hour until doubled.
  5. Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
  6. Divide dough into 12 pieces. Roll each into a rope and twist into pretzel shapes.
  7. In a large pot, bring 10 cups water and baking soda to a boil.
  8. Gently dip each pretzel into the boiling solution for 30 seconds. Remove and place on prepared baking sheets.
  9. Brush pretzels with beaten egg and sprinkle with coarse salt.
  10. Bake for 12–15 minutes until golden brown.
