Ingredients

  • 1 1/4 pounds ground beef
  • 1/2 cup Italian-style breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 2 cups marinara or spaghetti sauce
  • 4 sub rolls or hoagie buns
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, pepper, and parsley. Mix until just combined.
  3. Shape the mixture into meatballs about 1 to 1 1/2 inches in diameter and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes or until browned and cooked through.
  5. While the meatballs are baking, heat marinara sauce in a large skillet over medium heat.
  6. Add cooked meatballs to the sauce and simmer for 5 minutes.
  7. Slice sub rolls without cutting all the way through. Place 3–4 meatballs in each roll, spoon sauce over the top, and sprinkle with mozzarella.
  8. Place subs on a baking sheet and broil for 2–3 minutes or until cheese is melted and bubbly. Serve warm.
