Preheat oven to 430°F (220°C) or heat a skillet on medium-high.
In a bowl, mix ground beef, onion, garlic, spices, salt, parsley, and tomato until well combined.
Cut each pita in half to create pockets. Stuff with the meat mixture and flatten slightly.
Spray or brush both sides with oil.
To bake: Place on a rack and bake for 12 minutes, flipping halfway. Broil for 2 minutes if desired for extra crispiness.
To pan-fry: Cook over medium heat for about 3 minutes per side until golden and meat is cooked through.
Serve hot with yogurt sauce or tahini dip.
