Ingredients
For the Crust
1 ½ cups vegan cookies or graham crackers, crushed
¼ cup vegan butter, melted
For the Cheesecake Filling
2 cups vegan cream cheese
½ cup powdered sugar
1 tbsp cornstarch
1 tbsp lemon zest
3 tbsp lemon juice
½ tsp vanilla extract
For the Topping
Optional: lemon slices, zest, or whipped cream for garnish
Instructions
Prepare the Crust
Line an 8x8-inch pan with parchment paper.
Mix crushed cookies with melted vegan butter until combined.
Press mixture firmly into the base of the pan. Chill while preparing the filling.
Make the Filling
In a bowl, beat vegan cream cheese until smooth.
Add powdered sugar, cornstarch, lemon zest, lemon juice, and vanilla. Mix until creamy.
Pour the filling over the chilled crust and smooth the top.
Chill for at least 4 hours or until set.
Serve
Slice into bars and garnish with lemon slices, zest, or whipped cream if desired.
