Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup finely ground pistachios
  • 1 tablespoon finely grated lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line an 8-inch round cake pan.
  2. In a bowl, whisk flour, ground pistachios, lemon zest, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Mix in sour cream, lemon juice, and vanilla.
  6. Fold in dry ingredients until just combined.
  7. Pour batter into pan and smooth the top.
  8. Bake 30-35 minutes until a toothpick comes out clean.
  9. Cool in pan 10 minutes, then transfer to wire rack to cool completely.
