Ingredients

  • 1 cup cooked brown rice
  • 1 (5 to 7-ounce) can tuna in olive oil, drained and flaked
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/2 cup chopped cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped red onions
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon ground sumac (optional)
  • 1 tablespoon extra virgin olive oil
  • Juice of 1/2 lemon
  • Kosher salt and black pepper to taste
  • 1 to 2 tablespoons tahini sauce or Greek yogurt (optional)

Instructions

  1. In a large bowl, combine the rice, tuna, chickpeas, cucumbers, tomatoes, and red onions.
  2. Add the chopped parsley and sprinkle with sumac, if using.
  3. Drizzle the olive oil and lemon juice over the mixture, then season with salt and pepper.
  4. Toss gently to combine everything well.
  5. Top each bowl with tahini sauce or a spoonful of Greek yogurt if desired. Serve immediately.
