Ingredients

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • Juice of 1 lime

Instructions

  1. If using fresh corn, grill or sauté until slightly charred. Let cool.
  2. In a large bowl, combine mayonnaise and sour cream until smooth.
  3. Add the cooled corn, cotija cheese, cilantro, chili powder, smoked paprika, salt, and lime juice.
  4. Toss until everything is evenly coated.
  5. Garnish with extra cheese and cilantro before serving.
