Ingredients

  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 egg yolk
  • 1 1/2 teaspoons pure mint extract (not peppermint)
  • Green food coloring (optional)
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat butter and both sugars until light and fluffy.
  4. Add egg, egg yolk, mint extract, and food coloring. Mix until combined.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Stir in chocolate chips.
  7. Scoop dough and place on prepared baking sheets, spacing apart.
  8. Bake for 9-11 minutes, until edges are set but centers are soft.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
