Ingredients

For the Chocolate Cake

  • 2 cups (260g) all-purpose flour
  • 2 cups (414g) sugar
  • 3/4 cup (85g) natural unsweetened cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) vegetable oil
  • 1 cup (240ml) buttermilk
  • 1 1/2 tsp vanilla extract
  • 1 cup (240ml) hot water

For the Mint Frosting

  • 2 1/2 cups (560g) unsalted butter, room temperature
  • 10 cups (1150g) powdered sugar
  • 2 tsp mint extract
  • 5–6 tbsp (75–90ml) heavy cream
  • Green gel icing color, as desired
  • 2 cups (350g) mini chocolate chips

For the Chocolate Ganache

  • 9 oz (255g) semi-sweet chocolate chips
  • 3/4 cup (180ml) heavy cream

Instructions

Make the Chocolate Cake

  1. Preheat the oven to 300°F (148°C). Prepare three 8-inch cake pans with parchment circles and grease the sides.
  2. Combine flour, sugar, cocoa, baking soda, and salt in a large mixer bowl and whisk together.
  3. Add eggs, vegetable oil, buttermilk, and vanilla extract. Mix until smooth.
  4. Slowly add hot water and mix until well combined.
  5. Divide batter evenly between pans and bake for 30-33 minutes, or until a toothpick comes out clean.
  6. Remove cakes from the oven and cool for 10 minutes, then turn out onto cooling racks to cool completely.

Make the Frosting

  1. Beat the butter until smooth.
  2. Add half of the powdered sugar and mix until combined.
  3. Add mint extract and 3 tablespoons heavy cream and mix until smooth.
  4. Add remaining powdered sugar and mix until combined.
  5. Add additional cream to achieve desired consistency.
  6. Tint frosting with green gel coloring, if desired.

Assemble the Cake

  1. Place the first cake layer on a serving plate. Spread an even layer of frosting and sprinkle mini chocolate chips on top.
  2. Repeat with the second layer and frosting.
  3. Top with the third cake layer and frost the sides and top of the cake.
  4. Press mini chocolate chips into the sides of the cake.

Make the Ganache

  1. Add chocolate chips to a bowl. Heat heavy cream just until it begins to boil.
  2. Pour cream over the chocolate chips and let sit for 2-3 minutes, then whisk until smooth.
  3. Let the ganache cool slightly, then drip it over the cake edges and spread a layer on top.
